Everythings Better with Bacon...

With Katelyn visiting for the holidays, we were able to snag her and for a few days at our house. When she was a little gal, KT would often spend New Years Eve with me. As a hotel employee, Michael enjoys the perks of working in a building that never really closes and has been asked to work many New Years Eve's over the years so our little sleepovers were a perfect chance for some Aunt and Niece time. We developed a tradition of making something with spinach somewhere along the line. It may have originated with her childhood love of butter and me introducing her to buttered spinach but it's been many years and I am not certain. Anyhow, I had a new recipe ready for us to try...Feta Chicken Breasts. Here KT is posing for our before shot... We pounded out several chicken breasts and spread the inside with a tasty mixture of spinach, feta and seasonings before rolling the whole mess up and wrapping it in spinach. Mmmmm...Here's a pic of the goodness fresh from the oven.
We fashioned up a greek style salad using some odds and ends from the fridge and thawed a few hearty multi-grain rolls to bake up. Bon Apetit (or whatever the Greeks would say...)!
